Strawberry Crumble Cake

I came up with this super easy recipe yesterday. Its perfect for a quick desert with little effort! I meant to take a picture of what was left this morning, but ...uh... we (I) ate the leftovers before church this morning...I'm tellin' ya, I had dreams about this cake last night.

1 box yellow cake mix, bake as directed
2 pints fresh strawberries
3 tbsp brown sugar
1/3 to 1/2 cup sour cream
1 large tub of cool whip
1/2 cup powdered sugar

Bake the yellow cake and allow it to cool.

Slice your rinsed strawberries into small pieces and place in a medium sized bowl. Sprinkle with brown sugar and then add sour cream. Use enough sour cream to coat the strawberries. Stir completely, then  cover and set aside. Allow a few minutes for the juices of the strawberries to release.

Using whisk attachment, put cool whip in large bowl and whip for two to three minutes. Sprinkle powdered sugar into the bowl while you continue to whip until it appears nice and fluffy. Watch closely! Do not over whip or it will collapse! When the cool whip appears fluffy, turn of mixer and set aside. If cool whip mixture collapses, don't worry, it still tastes good, its just not as easy to spread.

In a large serving dish or 9x13 pan that is at least 2" deep, crumble your cake and scatter evenly in the bottom of the dish. Spread strawberry mixture over the top, then spread cool whip or homemade whipped cream.
