I came up with this super easy recipe yesterday. Its perfect for a quick desert with little effort! I meant to take a picture of what was left this morning, but ...uh... we (I) ate the leftovers before church this morning...I'm tellin' ya, I had dreams about this cake last night.
1 box yellow cake mix, bake as directed
2 pints fresh strawberries
3 tbsp brown sugar
1/3 to 1/2 cup sour cream
1 large tub of cool whip
1/2 cup powdered sugar
OR
Make your own whipped cream using this recipe:
http://allrecipes.com/recipe/whipped-cream/
Bake the yellow cake and allow it to cool.
Slice your rinsed strawberries into small pieces and place in a medium sized bowl. Sprinkle with brown sugar and then add sour cream. Use enough sour cream to coat the strawberries. Stir completely, then cover and set aside. Allow a few minutes for the juices of the strawberries to release.
Using whisk attachment, put cool whip in large bowl and whip for two to three minutes. Sprinkle powdered sugar into the bowl while you continue to whip until it appears nice and fluffy. Watch closely! Do not over whip or it will collapse! When the cool whip appears fluffy, turn of mixer and set aside. If cool whip mixture collapses, don't worry, it still tastes good, its just not as easy to spread.
In a large serving dish or 9x13 pan that is at least 2" deep, crumble your cake and scatter evenly in the bottom of the dish. Spread strawberry mixture over the top, then spread cool whip or homemade whipped cream.

Happy Independence Day/ THE BIG GIVEAWAY
I am a SAHM with four so children's birthdays are a HUGE deal to me. Perhaps its because my own parents always made sure we had special days when we were kids. My sister Jackie and I both have birthdays in August, so we often shared a celebration before school would start up again. We would have all the cousins, aunts and uncles, and even some of the other friends from the neighborhood or school as well and have a big bon fire in the back yard. We would have s'mores, hot dogs, chips, soda and ALWAYS cake and ice cream! The cakes were usually either a Kroger Bakery cake, a Baskin Robins ice cream cake (wonderful Connie Branson, what a dear sweet lady that owned BR at Washington Square Mall!!!) and every now and then we would have a 9x13 cake still in the pan with TWO cans of frosting and sprinkles... um.. YUM!
If you know me at all, you know that I do not discriminate against cake in any way shape or form. I eat it warm and gooey, cold and even sometimes frozen. I'll eat it with milk, with hot coffee, or sometimes a super fizzy soda, but I most often prefer it with soupy ice cream melted in it and all stirred together. yuuuuum.
Now that I am an adult, I am in charge of making birthday parties special! My husband almost always knows exactly what to get the girls for a gift... he is seriously the best at buying presents for his girls. While I am more akin to keeping them babies and buying them baby-ish stuff, he realizes that they are growing and their interests are changing. We make a good birthday party planning committee. He picks out the gift, I bake the cake. :)
I know this has been my longest blog yet, but I just wanted to give you a bit of understanding as to why I love childrens birthdays. I am from a family of six so birthday parties happened all year round. Now, I have a family of my own that is equal in size, and love... and even gender (one man, four little women, and me).
Please help me spread the joy. I want to bless another family in our area with FREE children's birthday cakes for the entire year, no matter how many children you have! The way I see it, the bigger the family, the bigger the party!!!!! :)
The way to enter this drawing (THAT IS IN NO WAY SPONSORED OR ENDORSED BY FACEBOOK) is 1) comment below. Share a thought about your childhood, your children's birhtdays...anything! Just join in the joy! Be sure to include an email address or some way to contact you if you win! :) AND 2) get a SECOND entry in the drawing by posting
"I want a Sweetie Cakes Cake for my Sweeties!" on the Sweetie Cakes Home Bakery page on facebook at
https://www.facebook.com/pages/Sweetie-Cakes-Home-Bakery-Rebecca-Wilburn/113620248698673
Please also share the page with your friends because this contest is a bit different... instead of ending on a certain day, it will end when I have 100 entries (not including the double entries)!
Here are the few rules :)
1) you must enter using the above methods
2) you must have some identifiable way for me to contact you, either email or other wise
3) If you win, you can bless another local family of your choosing with the prize(for example, your grandchildren all within the same household)
4) Winning participant must contact me back within 48 hours or another winner will be drawn
5) The cake design and flavors are up to you/your children but the value cannot exceed $30.00 unless you are willing to pay the difference
6) The dates for your birthday orders need to be made at least three weeks in advance and are subject to my availability. In other words, be sure to get that birthday on my calender asap! :)
7) I will mail you a gift certificate that must be redeemed when ordering. I am not responsible if the certificate is lost or destroyed.
8) PICK UP IS IN ODON!!! I can't deliver outside of local area or ship the orders. Thank you! :)
Please note: It has been brought to my attention that several friends are not able to post on this blog. After reading through several help forums, it appears that the problem is with cookies/script coding, especially with google accounts. Your computers cookie settings are very important to the security of your browser and I would never ask anyone to change cookie settings just to enter this give away (and the techno mumbo jumbo is way over my head anyway).
If you are having trouble posting here, please feel free to post your comment that you would have posted here on my facebook page ALONG with the "I want a Sweetie Cakes cake for my Sweeties!" as TWO separate posts and you will get TWO separate entries! Thank you! :) God bless!!!!
